Balsamic Glazed Butternut Squash

A long overdue post that has been sitting in my Drafts. Shame on me!!

This was an inspiration from a recipe I discovered on Snapchat.  If you are not familiar with Snapchat, please familiarize yourself.  In Snapchat, there is a feature called Discover. This section/feature is a fun way to explore different editorials such as Food Network, Tastemade, Buzzfeed, CNN, Natgeo, etc. Basically, by tapping an icon and a swipe to the left, one can discover fun videos and articles. It is the only reason why I am on Snapchat. Anyway, less about Snapchat more about this delicious squash.

In a large bowl, combine balsamic vinegar, honey, lemon pepper seasoning, olive oil, and cubed butternut squash. To give it a little oomph, I modified the recipe to include red chili flakes, and instead of lemon pepper, I added black pepper, sea salt, and Italian seasoning.  Once mixed, toss it in a baking sheet or nonstick pan and let the stove do its magic. Cook it until tender and brown. Literally, it takes 30 mins or less to make this.  Perfect for dinner or even as a side dish.
